I seldom find myself in Brea, but I made a special trip after hearing about Poultrygram, a new takeout concept from the Brea Improv and Executive Chef Geno Fontanoza.
Offered for delivery or takeout, Poultrygram’s menu is succinct: Original Chicken Sandwich with a buttermilk fried chicken breast with 12 herbs and spices, cucumber aioli, coleslaw, and house sweet pickle relish on a toasted brioche bun. You can also get it as a Nashville Hot version with chili glaze and Red Rooster aioli. They also have spicy wings, chicken tenders, seasoned fries, and cookies.
I called in an order of a traditional sandwich with fries to-go. After picking it up and finding a nearby park with a picnic table, I opened my box to find the spicy version of the sandwich. I took a tentative bite, then another. Spicy it was, but the slaw helped cut the spice. I devoured the entire sandwich, along with the thick cut fries.
Apparently the Improv owns several properties in Brea and they are using the Chop House kitchen, which is large enough to handle the onslaught of orders they’ve been receiving.
Poultrygram has competition. The Improv just launched a second concept called Resident Taco, focused on Mexican street food, specifically barbacoa (Mexican beef stew) and consommé. They serve tacos, tortas, quesadillas, consommé, barbacoa Ramen, sopes, Mexican street corn and churros.
