Pieology Pizzeria Names New CEO

Pieology Pizzeria, a Tustin-based chain of 130 restaurants, appointed Shawn Thompson as its new chief executive officer.

Thompson was previously president of Supercuts, president of Tim Hortons USA and Head of Global Operations for Restaurant Brands International (RBI). He has led large-scale consumer-facing franchised brands, opened hundreds of units, and developed deep franchisee relationships across multiple brands, Pieology said.

“We are very enthusiastic about his leadership in stewarding the evolution and growth of Pieology into the new economic environment we now live in,” Pieology founder Carl Chang said in a statement.

“I couldn’t be happier to lead Pieology into its next phase of growth,” Thompson said. “Carl created an amazing brand and I look forward to bringing it to the rest of the world.”

Founded in 2011, Pieology ranked No. 13 on the Business Journal’s most recent list of OC-based restaurant franchises, with an estimated $125 million in systemwide sales in 2020.
