Newport Beach-based Chipotle Mexican Grill Inc. today began testing a new menu item called Mexican Cauliflower Rice.
Available until June 21, the grilled cauliflower rice will be available at 60 different restaurants in Orange County, Phoenix and Wisconsin.
This menu innovation follows the Newport Beach-based chain’s earlier launches of a plant-based chorizo, pollo asado, and a watermelon limeade in 2022. The rice is meant to fit in with keto, vegan, paleo and other grain-free diets as part of Chipotle’s focus on offering responsibly sourced food.
As of March, Chipotle has over 3,000 restaurants companywide with over 100,000 employees. The restaurant chain reported first-quarter revenue of $2 billion in April.
