An animal-rights group is threatening legal actions against two Orange County chefs for serving foie gras.
People for the Ethical Treatment of Animals contends that Noah Blom and Amar Santana both are attempting to “skirt” a state law against the sale of foie gras, a delicacy made of duck liver.
PETA contends that Santana has violated the law by giving customers free servings of foie gras with the purchase of a $55 glass of wine at Broadway by Amar Santana in Laguna Beach. The group claims that Blom, chef at Arc in Costa Mesa, has used foie gras as an ingredient in a sauce for a steak dish. PETA contends the use of foie gras as an ingredient amounts to a sale of the product.
PETA’s threat of lawsuits doesn’t appear to have fazed either chef.
“No one has the right to tell people what to eat or not eat,” Santana told the Los Angeles Times.
Blom said the animal rights group’s complaint have made the dish have “made it more sought-after, creating this “cult craze,” according to the Times.
