WHY: Led the menu design of Downtown Disney’s three newest Mexican restaurants, Paseo, Céntrico and Tiendita, that opened in May 2024.
IN THE NEWS: Invited to bring three new original concepts centered on Mexican cuisine, from upscale dining to quick-service counter, to replace former Catal restaurant and Uva bar locations, managed by Patina Restaurant Group, at Downtown Disney District.
NOTABLE: First Mexican-born chef to open and own a Michelin-starred restaurant and has two other locations in Chicago and Mexico; said he had a mission to introduce unconventional Mexican cuisine at what are Gaytán’s first ventures on the West Coast.
